Recipe Ingredients for Pumpkin Zucchini Bread

3 eggs
1/4 cup canola oil
3/4 cup unsweetened applesauce
1/2 cup white sugar, plus 1/2 cup Stevia extract
1/3 cup brown sugar, packed
2 t. molasses
1 1/2 cup grated zucchini
1 cup canned pumpkin
2 teaspoons vanilla extract
1 cup all-purpose flour
2 cups whole wheat flour
1 teaspoon ground cloves
3 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1/2 c. walnuts

Recipe Directions for Pumpkin Zucchini Bread

  1. In a mixing bowl, combine eggs and sugar. Add pumpkin, oil, applesauce and vanilla.

  2. Combine dry ingredients; gradually add to pumpkin mixture and mix well.

  3. Stir in zucchini and 1/2 c. nuts (optional).

  4. Pour into two greased and floured 9-in. x 5-in. x 3-in. loaf pans.

  5. Bake at 350 degrees F for 45-50 minutes or until breads test done. Cool in pans 10 minutes. Remove to a wire rack.
