Recipe Ingredients for Pumpkin Yogurt Muffins v2

1 cup white whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp sea salt
1/4 tsp ginger
1 egg, large
2/3 cup dark brown sugar
1/4 cup canola oil
1 cup canned pumpkin
6 oz. Oikos organic Greek yogurt, plain
1 cup oats, old-fashioned

Recipe Directions for Pumpkin Yogurt Muffins v2

  1. Preheat the oven to 350 degrees. Grease a 12-cup muffin pan.

  2. In a small bowl, stir together the flour, baking powder, baking soda, cinnamon, salt, and ginger. Set aside.

  3. If using a whole egg, crack it into a small bowl. In a large bowl, use a fork to stir together the sugar and oil until blended. Stir in the egg, pumpkin, and yogurt until blended.

  4. Stir in the flour mixture until just blended.

  5. Gently stir in the oatmeal and raisins until just incorporated. Batter will be sticky.

  6. Use a 1/4 cup measure to scoop the batter into the muffin pan. Each cup should be filled about 2/3 full.

  7. Bake until a toothpick inserted in the center comes out clean, about 25 minutes. Allow to cool slightly. Serve warm or at room temperature. Store in a covered container for up to 3 days.
