Recipe Ingredients for Pumpkin Yogurt Mini-Muffins

1 1/2 cups white whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp sea salt
1/4 tsp ginger
1/4 cup egg whites
1/3 cup turbinado sugar
1 tbsp canola oil
1 cup pumpkin, roasted
1/2 cup unsweetened applesauce
1 tbsp olive oil
6 oz. Oikos Greek yogurt, vanilla
1 cup oats, old-fashioned

Recipe Directions for Pumpkin Yogurt Mini-Muffins

  1. Preheat the oven to 350 degrees. Cut the pumpkin in half and drizzle with olive oil. Place cut side down on a baking sheet. Roast for 45 minutes or until soft. Grease a 12-cup muffin pan.

  2. In a small bowl, stir together the flour, baking powder, baking soda, cinnamon, salt, and ginger. Set aside.

  3. In a large bowl, use a fork to stir together the sugar, applesauce, and canola oil until blended. Stir in the egg, pumpkin, and yogurt until blended.

  4. Stir in the flour mixture until just blended.

  5. Gently stir in the oatmeal until just incorporated. Batter will be sticky.

  6. Use a teaspoon to scoop the batter into the muffin pan. Each cup should be filled about 3/4 full.

  7. Bake until a toothpick inserted in the center comes out clean, about 20 minutes. Allow to cool slightly. Serve warm or at room temperature. Store in a covered container for up to 3 days.
