1 cup oats
3/4 cup brown sugar
1 tablespoon baking powder
1/2 tsp baking soda
1/2 tsp. cinnamon
1/3 cup walnut pieces
1 cup pumpkin
3/4 cup skim milk
1/3 cup canola oil
1 egg

Recipe Directions for Pumpkin-Walnut-Oat Muffins

  1. Preheat the oven to 400 degrees

  2. Mix the dry ingredients first in a separate bowl

  3. Mix the remaining ingredients in a separate bowl

  4. Pour the wet ingredients into the dry ingredients and stir until mixed

  5. Pour into muffin cups

  6. Bake for 20-23 minutes
