This lightly spiced pumpkin bread makes a welcome addition to the Thanksgiving day table.

Recipe Ingredients for Pumpkin Walnut Bread

1 1/4 cup Flour
1/2 cup Flax seeds
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
1/2 cup butter
1 cup sugar
2 eggs
3/4 cup pumpkin
3/4 cup walnuts

Recipe Directions for Pumpkin Walnut Bread

  1. Preheat oven to 350. Greas a 9x5" loaf pan.

  2. In a med. bowl, sift together flour, b. soda, salt, cinnamon, nutmeg, ginger and cloves.

  3. In another bowl, cream together butter and sugar until well blended. Beat in eggs one at a time.

  4. Using a mixer set on low speed, beat in flour mixture alternately with pumpkin, beginning and ending with dry ingredients.

  5. Gently fold in 1/2 cup nuts.

  6. Pour batter into prepared pan. Sprinkle with remaining nuts.

  7. Bake for 1 hour or until toothpick comes out clean. Transfer pan to a wire rack; let stand for 5 minutes. Turn bread inside out onto wire rack to cool completely.
