A very healthy way to use your post-Halloween pumpkin puree!

Recipe Ingredients for Pumpkin Walnut Bread

2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp allspice
1/2 cup SPLENDA Brown
1/4 cup SPLENDA no calorie
1/4 cup flaxseed meal
1 cup pumpkin
1 tsp vanilla extract
1 cup cottage cheese, non-fat
1/4 cup cooking oil
1/4 cup walnuts, chopped

Recipe Directions for Pumpkin Walnut Bread

  1. Sift dry ingredients together, then add the Splenda.

  2. In a separate large bowl, mix pumpkin, oil, cottage cheese, vanilla together.

  3. Add dry ingredients to the pumpkin mixture. Batter should resemble thick muffin batter. Pour into loaf pan sprayed with cooking spray.

  4. Bake in 375 degree oven for 35-40 minutes, or until toothpick inserted in center comes out clean.
