Recipe Ingredients for Pumpkin Waffles

2 cups unbleached flour
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
4 eggs
4 tbsp light brown sugar
2 cups milk
8 tbsp applesauce
1 cup pumpkin
1/2 cup chopped apple

Recipe Directions for Pumpkin Waffles

  1. In a large bowl, sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg; set aside.

  2. In a seperate bowl, beat together the eggs and brown sugar. Add the milk, applesauce and pumpkin; beat well.

  3. Add the liquid mixture to the flour mixture and stir until just blended. Fold in the apples.

  4. Laddle the batter into a hot, well-oiled waffle iron and cook until done.
