A delicious fall breakfast! Serve with yogurt and fruit.

Recipe Ingredients for Pumpkin Waffles

1/2 cup egg substitute
1 3/4 cup light vanilla soy milk
1/2 cup canned pumpkin
1 1/4 c. whole wheat flour
1/2 cup flax seed meal
1/4 cup wheat germ
4 t. baking powder
2 T. brown sugar
1 t salt
1/2 t. pumpkin pie spice, or cinnamon

Recipe Directions for Pumpkin Waffles

  1. Whisk together the egg substitute, soy milk, pumpkin, brown sugar, salt, and spice.

  2. Stir together the flours, flax meal, wheat germ, baking powder. Make sure there are no lumps!

  3. Add the liquid ingredients to the dry ingredients and fold together gently with a rubber spatula.

  4. Bake on your waffle iron according to directions.
