Recipe Ingredients for Pumpkin Tartlets

3/4 c sugar
1 tbs cornstarch
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
15 oz pumpkin
2 large egg whites
12 oz fat free evaporated milk
12 gingersnap cookies, crushed
16 tbs fat free whipped cream

Recipe Directions for Pumpkin Tartlets

  1. Beat egg whites.

  2. Combine sugar, cornstarch, cinnamon, ginger, salt in a bowl. Mix with egg whites.

  3. Add pumpkin.

  4. Add evaporated milk bit by bit.

  5. Pour into foil cupcake cups.

  6. The original recipe called for cooking these at 350 for 25-28 minutes. I cooked mine for 40+ minutes, and they never did cook completely through.

  7. Cool on pan for 20 minutes.

  8. Refrigerate for at least 1 hour.

  9. Add crushed cookies and whipped cream on top when serving.
