Pumpkin pie w/o crust; baked in muffin sheet

Recipe Ingredients for Pumpkin Tarlets

3/4 cup brown sugar
1 tablespoon cornstarch
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
2 large egg whites
15 oz. canned pumpkin
12 fl. oz. light vanilla soy milk

Recipe Directions for Pumpkin Tarlets

  1. Mix dry ingredients in small bowl

  2. Beat egg whites in large bowl

  3. Combine all ingredients in large bowl

  4. Bake in oven at 350 for approx 25 minutes
