Recipe Ingredients for Pumpkin Swirl Bunt Coffee Cake

1 cup Lowfat Plain
1 cup Pumpkin
8 oz In the Raw Zero Calorie Sweetener
1 1/2 cup dry Old Fashioned Quaker Oats
1 cup Oat Bran
1 oz (14 halves) Walnuts, English
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Vanilla Extract
4 large Egg, White
1 tbsp Cinnamon, Ground
2 oz In the Raw Zero Calorie Sweetener

Recipe Directions for Pumpkin Swirl Bunt Coffee Cake

  1. Preheat oven to 400 degrees F. Lightly grease a 10 in. bunt pan.

  2. Cream the sugar and eggs. Add the sour cream and pumpkin and beat well. Add remaining ingredients (except the Tbs. cinnamon and 1/4 cup stevia)

  3. Mix Cinnamon and 1/4 cup stevia in a separate bowl.

  4. Pour 1/2 of the batter into the greased bunt pan, sprinkle with the cinnamon mixture, and pour the remaining batter into the bunt pan.

  5. Bake in the oven at 400 F for 8 min. Then lower the temperature to 350 F and bake for another 40 min.
