Recipe Ingredients for Pumpkin Stuffed with Everything Good

2 cups pumpkin
1/3 cup heavy cream
4 oz gruyere cheese
4 oz bread
4 cloves garlic
1/4 cup scallions
1 tbls thyme
2 servings bacon
1 pinch nutmeg

Recipe Directions for Pumpkin Stuffed with Everything Good

  1. Heat oven to 350 Degrees

  2. Cut a hole in the top of a fresh 3-lb pie pumpkin and clean out all the seeds and strings. Salt and pepped the inside. Keep the lid.

  3. Mix cubed cheese (approx 1/2 inch cubes), cubed dried bread, chopped garlic, sliced scallions and minced thyme and 4 strips of crumbled up crispy fried bacon. Stuff the dressing into your pumpkin. Mix the cream with a pinch of nutmeg and pour over the dressing in the pumpkin. Put the lid on the pumpkin and place it on a baking sheet lined with parchment. Bake 90 minutes at 350. Take off the pumpkin lid and cook up to another 30 minutes to brown the top of the stuffing. Pumpkin is done when the flesh is easily pierced by a knife.

  4. To serve, dig into the pumpkin with a big spoon and pull the pumpkin flesh into the stuffing. Mix everything up and serve. Two generous servings.
