Actually, use 1 pouch (1 lb. 1.5 oz) Betty Crocker oatmeal cookie mix instead of oats listed above and 1/2 cup cruched gingersnap cookies instead of graham crackers. I had to use replacement ingredients above in order to figure out calories.

Recipe Ingredients for Pumpkin Streausel Cheescake Bars

2 cups oats
1/2 cup graham crackers
1/2 cup pecans, finely chopped
1/2 cup cold butter
1 packages cream cheese
1 cup sugar
1 cup canned pumpkin
2 tbsp flour
1 tbsp pumpkin pie spice
2 tbsp whipping cream
2 eggs
1/3 cup caramel topping

Recipe Directions for Pumpkin Streausel Cheescake Bars

  1. Heat oven to 350 degrees. In large bowl, stir together cookie mix, crushed cookies, and pecans. Cut in butter, using pastry blender or fork, until mixture is crumbly. Reserve 1 cup of mixture for topping. Press remaining mixture in bottom of ungreased 9x13" pan. Bake 10 minutes. Cool 10 minutes.

  2. Meanwhile, in a large bowl, beat cream cheese and sugar with electric mixer on medium speed until smooth. Add remainig filling ingredients (not the caramel topping) and beat ntil well blended. Pour over warm cookie base. Sprinkle with reserved topping.

  3. Bake 35-40 minutes or until center is set. Cool 30 minutes. Refrigerate about 2 hours or until chilled.

  4. Before serving, drizzle with caramel topping (&/or chocolate topping). Yield 48 small squares.
