Pumpkin Stew - a Trinidadian dish of East Indian influence. It can be eaten as a breakfast dish with Roast Bake or Sada Roti. It can also be eaten with paratha roti along with mouth watering curried dishes in a complete meal known as 'buss up shut'.

Recipe Ingredients for Pumpkin Stew

1/2 cup, mashed Pumpkin
1/2 small Onions
3 clove Garlic
1 tbsp Olive Oil

Recipe Directions for Pumpkin Stew

Saute onions and garlic along with fresh seasonings like chive, parsley, thyme and celery. Add the pumpkin chopped into blocks. After about one minute, add the water to just about cover the pumpkin. Add water from time to time to ensure that it does not burn. After about three minutes, mash the pumpkin with a potato masher. If still hard, let it cook for an additional two minutes. When a nice soft texture is achieved, add salt and black pepper to taste.
