Lovely cake like pumpkin squares; good with a cream cheese frosting.

Recipe Ingredients for Pumpkin Squares

2 cup Wheat Flour, White, All-purpose, Enriched, Bleached
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt, Table
2 tsp Cinnamon, Ground
2 cup Pumpkin
4 large Egg, White
1 cup Vegetable Oil, Canola
1.66 cup Sugars, Granulated

Recipe Directions for Pumpkin Squares

  1. Heat oven to 350 degrees.

  2. Beat together pumpkin,eggs,sugar & oil.

  3. Mix flour, baking powder,soda,salt & cinnamon; add to liquid and blend together well.

  4. Place in ungreased 9x13 baking dish, like a lasagna pan.

  5. Bake at 350 for 35 minutes or until toothpick in centre comes out clean.

  6. Frost with cream cheese icing.

  7. Eat only one piece and enjoy it, like ,totally.
