Recipe Ingredients for Pumpkin Squares

4 eggs
1 2/3 cup organic sugar
1/2 cup vegetable oil
1/2 cup unsweetened applesauce
15 oz. pumpkin puree
2 cups whole wheat flour
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3/4 cup margarine
6 oz. cream cheese
1 tsp. vanilla
3 cups powdered sugar

Recipe Directions for Pumpkin Squares

  1. Preheat oven to 350 degrees

  2. In a medium bowl, beat together eggs, sugar, vegetable oil and pumpkin puree.

  3. In a seperate bowl, combine flour, cinnamon, baking powder, baking soda adn salt. Gradually add flour mixture to pumpkin mixture and stir until well combined.

  4. Pour mixture into an ungreasted 10x15" baking pan.

  5. Bake in oven for 25 to 30 minutes or until a toothpick inserted in center of cake comes out clean.

  6. Remove from oven and let cool in pan.

  7. To make Frosting... In a seperate mixing bowl, beat together butter, cream cheese and vanilla, mixing until smooth. Gradually add powdered sugar.

  8. Spread frosting over cooled pumpkin cake and cut into squares.
