Whole wheat pancakes with pumpkin and spices

Recipe Ingredients for Pumpkin spice pancakes

2 cups whole wheat flour
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp cloves
2 large eggs
1 cup lowfat buttermilk
1 cup 1% milk
2 tbsp canola oil
1 tsp vanilla extract
1 cup pumpkin

Recipe Directions for Pumpkin spice pancakes

  1. combine flour, baking powder, salt and spices

  2. combine eggs, milk, oil and extract

  3. gradually add wet ingredient and mix into dry ingredients

  4. once incorporated add pumpkin

  5. do not over mix

  6. let set for 10 mins.

  7. heat skillet and coat with cooking spray

  8. add 1/4 cup of batter to make 3" pancakes

  9. enjoy with agave nectar
