Recipe Ingredients for Pumpkin Spice Loaf

1 c. Pumpkin, Prepared and Unsweetened
1/2 c. apple sauce, no sugar added
3/4 c. sugar
1 tsp. Vanilla Extract
1/2 c. egg substitute
1 c. Flour
1 c. oatmeal
2 tsp. Baking Soda
1 tsp. Baking Powder
2 tsp. Pumpkin Pie Spice
1 tsp. Cinnamon

Recipe Directions for Pumpkin Spice Loaf

  1. Preheat oven to 375 degrees.

  2. Combine the pumpkin, brown sugar, egg yolk, and vanilla in the bowl. Add flour, baking soda, and spices until combined.

  3. In a separate bowl, beat egg whites until they yield a medium to stiff peak. Carefully fold into batter in 3 steps.

  4. Pour in a greased (with baking spray) 9x5-inch loaf pan. Bake for 45 minutes, until a long toothpick inserted is clean.
