Recipe Ingredients for Pumpkin Spice Bread

4 1/2 tsp Ener-G egg replacer
6 tbsp water
2 cups granulated sugar
1 1/2 cups unsweetened applesauce
14 oz pumpkin puree
3 cups unbleached all-purpose flour
1 tsp ground cloves
1 tsp ground cinnamon
1 tsp nutmeg
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

Recipe Directions for Pumpkin Spice Bread

  1. Preheat oven to 350. Lightly oil 2 loaf pans. Mix the Ener-G powder with the water; whisk with a fork until thick and creamy.

  2. In large bowl, stir together sugar, applesauce, pumpkin puree, and Ener-G mixture.

  3. In medium bowl, stir together flour, cloves, cinnamon, nutmeg, baking soda, baking powder, and salt. Thoroughly combine; add them to wet ingredients. Stir until just combined.

  4. Pour batter into loaf pans. Bake for 55 to 60 minutes, or until toothpick inserted in center comes out clean. Let cool for at least 20 minutes before removing from loaf pans - they are still baking on the inside.
