Recipe Ingredients for Pumpkin soup

1 onion
1 tablespoon garlic
1 tablespoon olive oil
1 teaspoon cinnamon
1/4 teaspoon cumin
3 g ground ginger
1/8 teaspoon Red Pepper, Ground
30 ounces canned pumpkin
1 1/2 cup apple cider
0.33 cup maple syrup
15 ounce vegetable broth
1 teaspoon salt
1 cup 1% milk
4 tablespoons lite sour cream

Recipe Directions for Pumpkin soup

In a large pot, sauté onion in olive oil for 2-3 minutes. Add garlic and cook until onion is tender. Stir in cinnamon, cumin, ginger and red pepper; cook an additional 2-3 minutes. Add pumpkin, cider, maple syrup and broth. Bring to a boil, reduce heat and stir in salt and milk. Simmer for about 20-25 minutes. Serve with sour cream.
