Recipe Ingredients for Pumpkin Soup

16 oz canned pumpkin
13 3/4 oz vegetable broth
1 onion
2 carrots, diced
2 c soymilk
1/4 c Better Than Sour Cream
1/8 tsp pepper
1 tsp cinnamon
1/2 tsp baking soda
1/3 tsp salt
4 tsp Bacos Bits

Recipe Directions for Pumpkin Soup

  1. In a large pot, combine vegetable broth, onion, carrot, baking soda, salt, and pepper.

  2. Simmer uncovered for 10-15 minutes, until carrots are soft.

  3. Soup can be put into food processor if you would like a creamier texture, then returned to the pot.

  4. Add canned pumpkin and soymilk. Simmer uncovered for 10 minutes.

  5. Top with sour "cream" and Bacos.
