Recipe Ingredients for Pumpkin Soup

1 medium onion, chopped
2 tbsp. butter
6 cups chicken or vegetable broth
2 pounds pumpkin
1 tsp. salt
1/4 tsp. black pepper
1 cup skim milk

Recipe Directions for Pumpkin Soup

  1. Sauté chopped onion in the butter over medium heat until golden in color.

  2. Add chicken broth, pumpkin cubes, salt, and pepper. Bring to a boil and simmer about 20 minutes, or until the pumpkin cubes are soft.

  3. Remove from heat and puree the mixture in a blender or food processor, then return to saucepan.

  4. Add the milk to the puree and bring to a boil over medium heat.

  5. Adjust seasonings.

  6. For a quicker soup, substitute 5 cups of canned pumpkin puree for the pumpkin cubes
