Recipe Ingredients for Pumpkin Soup

2 tbsp olive oil
1 med. vidalia onion, diced
6 scallions, dice
1 clove garlic, minced
30 baby carrots, diced
30 oz. pumpkin
32 oz. chicken broth
1 tbsp cinnamon
1 tsp ground ginger

Recipe Directions for Pumpkin Soup

  1. Saute garlic and diced onions until soft

  2. Add ground spices

  3. Add diced carrots

  4. Add chicken broth and simmer until vegetables are tender

  5. Add pumpkin

  6. Stir and heat through
