Pumpkin Soup Recipe

Pretty good. Add a little salt and pepper, and a dollop of sour cream on top.

Recipe Ingredients for Pumpkin soup

2 cups butternut squash, cubed
2 cups yellow squash, sliced
3 cups pumpkin, canned
1 cup skim milk
2 tbsp fat free sour cream
1 oz neufchatel cheese
1/2 cup reduced fat cheddar cheese
2 tbsp flour
1 1/4 cup vegetable broth

Recipe Directions for Pumpkin soup

  1. Steam squashes

  2. Blend squash, pumpkins, and broth in blender

  3. In saute pan, begin boiling milk, add sour cream and neufchatel cheese

  4. When it begins boiling, slowly begin adding flour, stirring constantly

  5. Then add shredded cheese, stir till it melts

  6. Blend this mixture and mixture already in blender

  7. Can be finished at this point, or simmered on stove in a pot
