Warm soup for the fall and great for the holidays!!

Recipe Ingredients for Pumpkin Soup

29 ounce pumpkin
28 ounce chicken broth
1 tbsp margarine
1 tbsp flour
5 tbsp brown sugar
2 tsp pumpkin pie spice
1/2 tsp salt
1/4 tsp pepper
1 1/2 cups cream

Recipe Directions for Pumpkin Soup

  1. Over medium heat, mix the canned pumpkin and chicken broth together in a large pot, using a whisk, until well blended.

  2. Add margarine and flour, whisking constantly until smooth.

  3. Add the brown sugar 2 tbsp at a time until it tastes sweet enough to you.

  4. Add pumpkin pie spice, salt and pepper.

  5. Heat to boiling.

  6. Reduce heat, cover and cook for 10 minutes.

  7. Remove from heat.

  8. Add half and half.

  9. Return to heat and heat through. DO NOT BOIL.

  10. Serve with a dallop of lite whipped cream.
