My first attempt at a pumpkin soup.

Recipe Ingredients for Pumpkin Soup - Batch 1

250 grams onion
150 grams potatoes
1000 grams squash
12 grams garlic
6 grams stock cube

Recipe Directions for Pumpkin Soup - Batch 1

  1. Cup butternut pumpkin in half. Scoop out the seeds and add 2 cloves of garlic (peeled) plus half a cup of water to the hollow.

  2. Cover with foil and bake on a baking tray at 230 degrees Celcius (non fan forced oven) for 2 hours.

  3. Peel and chop potato into rough chunks. Wrap up in foil (leave a small opening for gas to escape) and bake for 1 hour.

  4. Dry-fry onion on a non stick cook pan for 10 minutes, or until translucent. Add water if onion is browning too much. If you add water, allow it to reduce before the next step.

  5. When the onion is done, process it in a food processor until it is in fine pieces.

  6. Add the potato, and process until texture is consistent throughout.

  7. Scoop pumpkin out of skin, then add to the processor with the garlic. Pulse until texture is consistent.

  8. Add spices to taste.
