Recipe Ingredients for Pumpkin softie

1 cup Pumpkin
1/2 cup dry Old Fashioned Quaker Oats
1 cup Oat Bran
3 tsp Sugar Light Brown
1 large Egg, White
0.25 cup (not packed) Raisins, Seedless

Recipe Directions for Pumpkin softie

  1. Preheat oven to 350 degrees. Line a large baking sheet with parchment paper and set aside.

  2. Mix all ingredients, also add 3 tbs stevia in the raw, 1 tsp. pumpkin pie spice,1 tsp. cinnamon,1/2 tsp., baking powder, 1/8 tsp. salt, and 1/4 tsp. vanilla extract. Mix all above ingredients well.

  3. Bake in the oven until a toothpick inserted into the center of a "softie" comes out clean, 12 - 15 minutes. Allow to cool and then enjoy!

  4. MAKES 8 SERVINGS
