A smoothie that provides a great source of vitamin A and beta-carotene. Reminiscent of homemade pumpkin pie.

Recipe Ingredients for Pumpkin Smoothie

15 oz Pumpkin
1 serving Agave Nectar
1 tbsp Vanilla Extract
1 tbsp Pumpkin Pie Spice
2 serving Unsweetened Coconut Milk (Trader Joe's)

Recipe Directions for Pumpkin Smoothie

  1. 15 oz can pumpkin puree

  2. 2 c. coconut milk, soy milk or almond milk

  3. 2 c. ice

  4. 2 Tbl. agave nectar or maple syrup, or to taste

  5. 1 Tbl vanilla extract, or to taste

  6. 1 Tbl. pumpkin pie spice (or combo of cinnamon, nutmeg, and allspice.

  7. Blend all together in blender for 1-2 min, until everything is incorporated
