As good as Pumpkin Pie, but without the crust and fat. Counts as 1 1/2 vegetable, 1/2 starch.

Recipe Ingredients for Pumpkin Smash

2 cups pumpkin, boiled and mashed
1 1/2 cups evaporated milk, fat free
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
3/4 cup Splenda No Calorie Sweetener (granulated)
2 tsp. pumpkin pie spice

Recipe Directions for Pumpkin Smash

Mix ingredients, pour into greased casserole or pie plate, and bake at 350 for 45 minutes. Cut into 9 pieces. Store in refrigerator.
