Yields two loaves of 20 slices each. (one serving = one slice).

Recipe Ingredients for Pumpkin seed and flax bread

4 cups unbleached white flour
1/2 cup whole wheat flour, stoneground
1/2 cup whole rye flour, stoneground
1/2 cup flax seeds, ground
1/4 cup olive oil
1 cup pumpkin seeds, raw
1 tbsp yeast, granulatedd
1 tbsp salt
1 tbsp sugar

Recipe Directions for Pumpkin seed and flax bread

Mix all ingredients together and add 2 and 3/4 cups lukewarm water. Mix throughly with a wooden spoon. Cover loosely and et rise two hours. Refrigerate overnight (covered loosely). The next day, shape a loaf using half the dough. Dust the surface with flour and place it in an oiled oblong loaf pan. Allow to rise two hours (dust the top with flour and cover with a tea towel). Slash the top lengthwise about 1 cm deep. Bake 25-30 minutes at 450 F. Turn onto a cooling rack. Allow to cool completely before slicing.
