Recipe Ingredients for Pumpkin, Sausage & Kale topping for Pasta or rice

1 lb. turkey Sausage Italian
1 medium yellow onion, chopped
3 cups pumpkin, diced
1/4 cup dry white wine
4 cloves garlic, minced
1 tsp. dried marjoram
1 cups chicken broth low sodium
10 oz. kale, trimmed, ribs removed, leaves cut into 1-inch pieces
1/2 cup grated Parmesan, reduced fat

Recipe Directions for Pumpkin, Sausage & Kale topping for Pasta or rice

  1. Saute Sausage in a non stick pan sprayed with Pam. When brown add onions. When onions are brown add pumpkin, wine, garlic, marjoram and cook til wine evaporates. Add kale and broth. Cook til kale and pumpkin are tender.

  2. Add Cooked Pasta or rice to pan along with grated Parmesan. mix and serve.
