Recipe Ingredients for Pumpkin salad

10 ml olive oil (1 soup spoon)
600 g butternut squash (1 small/med), raw
1 tsp sugar
50 ml balsamic vinegar (4 soup spoons)
1 tsp splenda
10 ml olive oil (1 soup spoon)
1 pinch salt
50 g parmesan
100 g baby spinach (1 bag), raw
50 g red onion (1/4 onion), raw
50 g quinoa, dry weight

Recipe Directions for Pumpkin salad

  1. Roast pumpkin with 1 soup spoon of oil + 1 tsp sugar, cool

  2. mix dressing: 5 soup spoons of balsamic, 1 soup spoon of olive oil, 1 tsp sugar, 1/2 tsp salt

  3. cook quinoa 10 mins, cool

  4. combine ingredients
