Best to serve with any kinds of bread and low fat cheese.

Recipe Ingredients for Pumpkin salad

150 grams pumpkin, coarsely cut
30 grams mushrooms, diced
1 1/2 tbsp sunflower seeds
1 tsp olive oil
1 salt
1 pepper
1/2 tsp oregano
1/2 tsp basil

Recipe Directions for Pumpkin salad

  1. Boil Pumpkin in salted water until soft.

  2. In a bowl, mix 1/4 tsp olive, salt, pepper and mushrooms.

  3. In a saucepan, heat 1/2 tsp olive oil on low heat.

  4. Add sunflower seeds and stir for a min or until they turn brown.

  5. Add in pumpkin, turn off the gas, add salt, pepper and herbs. Stir until the pumpkin dries up.

  6. Add in remaining oil and mushrooms, mix well. Serve.

  7. note: mushrooms are served raw.
