Recipe Ingredients for Pumpkin & Sage Gnocchi

400 grams Pumpkin
400 grams Potato, Baked, Flesh And Skin
34 grams Egg, Yolk
1.5 cup Wheat Flour, White, All-purpose, Enriched, Bleached
2 tablespoon Sage
1 tbsp Butter

Recipe Directions for Pumpkin & Sage Gnocchi

  1. Boil pumpkin and potatoes until done

  2. Drain then set back on heat to remove excess moisture

  3. When cool, mash until lump free

  4. Add yolks, flour, sage (chopped), and seasoning and mix into dough

  5. Tip onto lightly floured surface and knead until smooth

  6. Roll into sausage shape, 2cm in diameter

  7. Cut 2cm pieces and flatten with a fork

  8. Bring a pan of lightly salted water to boil

  9. Add gnocchi (a third at a time) and simmer, don't stir. They will pop to the surface when cooked

  10. (Optional) Fry cooked gnocchi in butter with sage leaves

  11. (Optional) Serve with shaved parmesan or pecorino
