Pumpkin cake roll with cream cheese filling

Recipe Ingredients for Pumpkin Roll

3/4 cup flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
3 large eggs
1 cup sugar
2/3 cup pumpkin
8 oz fat free cream cheese
1 cup powdered sugar
6 tablespoons butter
1 teaspoon vanilla

Recipe Directions for Pumpkin Roll

  1. Preheat oven to 375

  2. Grease 10 X 15 jelly roll pan

  3. Line with wax paper

  4. Grease and flour wax paper

  5. Sprinkle towel with powdered sugar

  6. Combine first six dry ingredients in a small bowl

  7. Beat eggs and sugar in a large mixing bowl until thick

  8. Beat in pumpkin

  9. Stir in dry ingredients

  10. Spread evenly in pan

  11. Sprinkle with 1 cup chopped nuts if desired

  12. Bake for 13-15 minutes or until top of cake springs back to the touch

  13. Immediately loosen and turn cake onto prepared towel

  14. Carefully peel off paper

  15. Roll up cake and towel together, starting with the narrow end

  16. Cool rolled up on wire rack

  17. Beat softened cream cheese, powdered sugar, vanilla, and softened butter in a small mixing bowl until smooth

  18. Carefully unroll cake

  19. Remove towel

  20. Spread cream cheese mixture over cake

  21. Reroll cake

  22. Wrap in plastic wrap and refridgerate for at least one hour

  23. Sprinkle with powdered sugar before serving
