Pumpkin Roll Recipe

Freezes well. I switched waxed paper for parchment paper.

Recipe Ingredients for Pumpkin Roll

3 eggs
1 c sugar
1 t lemon juice
2/3 c canned pumpkin
3/4 c flour
2 t cinnamon
1/2 t nutmeg
2 t baking powder
1 t ginger
1 1/4 c powdered sugar
8 oz cream cheese
4 T butter (melted)
1 t vanilla

Recipe Directions for Pumpkin Roll

  1. Beat eggs until light and lemon colored.

  2. slowly add sugar and lemon juice.

  3. fold in pumpkin

  4. sift flour, cinnamon, nutmeg, baking powder, and ginger together and fold into egg mixture

  5. Prepare 11 x 16 inch jelly roll pan by greasing bottom, covering bottom with parchment paper and buttering the parchment paper.

  6. pour in mixture.

  7. Bake at 359 degrees for 15 minutes.

  8. turn out onto damp dishcloth that has been sprinkled with 1/4C powdered sugar. Roll up and cool.

  9. Prepare filling by beating together cream cheese, butter vanilla, and 1C powdered sugar.

  10. Unroll pumpkin roll and spread wtih cream cheese mixture.

  11. Re-roll and wrap in aluminum foil. Refrigerate several hours.

  12. dust with powdered sugar and serve.
