Recipe Ingredients for Pumpkin Roll before

1 egg
1/2 cup egg whites
2/3 cup pumpkin pie filling
1/3 cup sugar
1/2 cup applesauce
3/4 cup whole wheat flour
2 tsp cinnamon
1/2 cup sugar, confectionary
8 oz light cream cheese, softened
2 tsp vanilla
1 tbsp butter, softened
1 tbsp canola oil

Recipe Directions for Pumpkin Roll before

  1. Beat eggs, pumpkin pie filling, sugar, flour and cinnamon together

  2. Line a jelly roll pan with tin foil and spray with Pam

  3. Pour mix into pan and bake at 350 for 15 minutes

  4. Saturate a tea towel with 1 cup confectionary sugar (most easily done using a freezer bag)

  5. Once cake is done, flip onto tea towel

  6. Roll cake and towel together lengthwise

  7. Set for 2 hours

  8. Next, beat together cream cheese, vanilla and butter for the filling

  9. After 2 hours unwrap cake and remove towel. Spread filling on the inside of the roll and rewrap cake.

  10. Wrap entire roll in wax paper and then tin foil.
