Recipe Ingredients for Pumpkin Risotto

2 servings arborio rice (180 grams dry)
1 cup pumpkin puree
1 tsp garlic, minced
1 tsp curry powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground ginger
1/8 tsp ground clove
1/2 cup 1% milk

Recipe Directions for Pumpkin Risotto

  1. Prepare arborio rice, starting with a small bit of water, oil, and seasonings.

  2. Gradually add milk and pumpkin to risotto, stirring almost constantly. Alternate adding each until all of both are incorporated.

  3. Sprinkle each dish with 1/4 of the Parmesan cheese and serve immediately.
