A TRUE WINNER! Lower fat no sugar pumpkin muffins

Recipe Ingredients for Pumpkin w/ raisins mini cupcakes - Sugar Free/Low fat

3 3/4 cups White Whole Wheat Flour
2 teaspoon baking soda
2 teaspoon baking powder
15 oz can pumpkin
2 cup splenda
4 large eggs
1 cup raisins
1 cup applesauce
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon ginger
1 teaspoon salt
1/2 teaspoon nutmeg

Recipe Directions for Pumpkin w/ raisins mini cupcakes - Sugar Free/Low fat

  1. PREHEAT oven to 350 F. Put muffin tins in muffin pans

  2. Mix flour, baking soda, baking powder, spices into medium bowl, add splenda, then add eggs, applesauce in stir well. Stir in nuts, raisins just until moistened. Spoon into muffin tins.

  3. BAKE for 50 minutes or until wooden pick inserted in center comes out clean. Start checking for doneness around 5 - 10 minutes prior to 50 minutes for moistness. If over cooked they will NOT be moist. If you do over cook them, just dunk them in a glass of milk and that will bring back the moisture.

  4. Cool in pan on wire rack for 10 minutes; remove to wire rack to cool completely.

  5. Makes about 30 mini muffins if using a medium size cookie scoop.

  6. Since there is no sugar (a preservative) in recipe you'll need to store in refrigerator so they do not mold quickly.
