Pumpkin, raisin and cinnamon cookies

Recipe Ingredients for Pumpkin, raisin and cinnamon cookies

225 g butter
300 g soft brown sugar
1 large egg
1 tsp vanilla extract
250 g pumpkin
75 g rolled oats
1 tsp baking powder
1 tsp ground cinnamon
150 g raisins
300 g plain flour

Recipe Directions for Pumpkin, raisin and cinnamon cookies

  1. Preheat the oven to 180C/160C fan/gas 4.

  2. Mix together the butter and sugar until light and creamy. Beat in the egg, vanilla extract and pumpkin purée.

  3. In a separate bowl, mix together the oats, baking powder, cinnamon, salt, raisins and flour. Stir this into the pumpkin mixture.

  4. Place spoonfuls of the cookie dough onto a greased non-stick baking tray (or one lined with non-stick parchment paper) and flatten with the back of a spoon.

  5. Place in the oven for 12-15 minutes until slightly golden.

  6. Remove and cool on a wire rack.
