This isn't really a pudding, but I don't know what else to call it. More like semi-sweet pie filling.

Recipe Ingredients for Pumpkin Pudding

15 oz canned pumpkin
4 eggs
80 g raisins

Recipe Directions for Pumpkin Pudding

Preheat oven to 350 and butter a pie pan. Take 80g raisins, put in a small pot with just enough water to cover, and bring to a boil. Allow them to boil for 10 minutes or so, to evaporate some of the liquid and plump the raisins as much as possible. Next, in a large bowl, combine the raisins, their cooking liquid, and one 15 ounce can of pure pumpkin. Next, add in the four eggs, mix well. Pour the mixture into your buttered pie pan and bake for approximately one hour. I think this tastes better the next day. You can add sugar or your sweetener of choice if you want it sweeter. Very good for breakfast with a couple of eggs.
