Adapted from Fat Boy Snacks' Recipe-substituting oat flour for oatmeal, greek yogurt for cottage cheese, and no need to use blender.

Recipe Ingredients for Pumpkin Protein Pancakes

1 serving Oat Flour
0.5 Teaspoon Baking Powder
3 packet SPLENDA No Calorie
0.25 tsp Pumpkin Pie Spice
6 tbsp Egg Whites
1 dash Salt, Table
0.25 cup Pumpkin
2 oz Greek Yogurt
0.5 tsp Vanilla Extract

Recipe Directions for Pumpkin Protein Pancakes

  1. Spray griddle with nonstick spray and heat to 375

  2. Mix egg whites, yogurt, vanilla, pumpkin and splenda together with a whisk

  3. Add dry ingredients and stir

  4. Bake pancakes - makes about 8
