Modified from Jamie Eason's Carrot Protein Bars

Recipe Ingredients for Pumpkin Protein Bars

1 cup Whole Grain Oat Flour
2 serving American Pure Whey
1/4 tsp Sea Salt
0.5 tsp Baking Soda
2 tsp Cinnamon, Ground
0.13 tsp Nutmeg, Ground
3 large Egg, White
36 teaspoon Truvia
0.5 cup Fat Free Ricotta Cheese
8 oz Pumpkin

Recipe Directions for Pumpkin Protein Bars

  1. Preheat oven to 350 degrees.

  2. Mix dry ingredients in a large bowl.

  3. Mix remaining ingredients (including Truvia) in a medium bowl and whisk.

  4. Mix wet ingredients in with dry in the larger of the two bowls.

  5. Pour batter into an 8x8 baking pan that has already been greased with olive oil spray (or Pam of some kind).

  6. Bake for 22-28 minutes or until inserted toothpick comes out clean.
