Recipe Ingredients for Pumpkin Pound Cake

3 cups plain flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1/2 teaspoon salt
2 cups sugar
1 1/4 cups vegetable oil
4 eggs
2 cups canned pumpkin
1/2 cup ground pecans

Recipe Directions for Pumpkin Pound Cake

  1. Preheat the oven to 375F. Butter and flour a 10-inch tube pan.

  2. Mix the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a large bowl.

  3. Beat the sugar and oil in a large bowl with an electric mixer at medium speed until well blended.

  4. Add the eggs, one at a time, beating until just blended after each addition.

  5. With mixer at low speed, gradually beat in the pumpkin and mixed dry ingredients.

  6. By hand, stir in the pecans.

  7. Spoon the batter into the prepared pan.

  8. Bake for 70-80 minutes, or until golden brown on top and a toothpick inserted into the center comes out clean.

  9. Run a knife around the edges of the pan to loosen the cake. Cool the cake in the pan for 15 minutes. Turn out onto a rack and let cool completely.

  10. Dust with the confectioners' sugar just before serving.
