Variation on a Pompeian olive oil recipe

Recipe Ingredients for Pumpkin Pineapple Muffins

1 cup white flour
1 cup wheat flour, whole-grain
1 tsp salt
2 tsp baking powder
2 tsp cinnamon
2/3 cup light brown sugar
1/2 cup pecans
1/3 cup canola oil
2/3 cup buttermilk
2 egg whites
15 oz pumpkin
8 oz pineapple tidbits
2 tsp vanilla extract

Recipe Directions for Pumpkin Pineapple Muffins

  1. Reserve 1 tbsp sugar and 1/2 tsp cinnamon and combine

  2. Drain pineapple

  3. Combine dry ingredients

  4. Whisk liquid ingredients

  5. Add liquid to dry and stir until just combined

  6. Portion in to 12 muffin tins and sprinkle with reserved sugar & cinnamon mixture

  7. Bake at 400 F for about 20 minutes or until toothpick inserted in center comes out clean
