Crunchy on the outside and a bit creamy on the inside, these waffles are a good and healthy breakfast. No oil, yolks, or added sugar. The maple syrup on top will provide all the sweetness needed.

Recipe Ingredients for Pumpkin Pie Waffles

1 1/3 cup whole wheat flour (i've also used a combination of whole grain flours)
1 cup water, almond, rice, or oat milk (add more if too thick)
1/3 cup egg whites
1 cup pumpkin, canned
2 teaspoons baking powder
1 1/2 teaspoons cinnamon (more to taste)
1/2 teaspoon ginger
1 teaspoon nutmeg
3/4 teaspoon salt
1 tbsp coconut oil (optional)
1 Cooking Spray

Recipe Directions for Pumpkin Pie Waffles

Beat egg whites; add milk,yogurt, and pumpkin. Combine salt,flour, and spices. Add to first mixture. Beat until smooth. Sift baking powder lightly over the mixture and fold in quickly. Bake in hot waffle iron.
