Recipe Ingredients for Pumpkin Pie Squares

552 g yellow cake mix
1/2 c butter, melted
1 egg, slightly beaten
2 c pumpkin, canned
2 eggs
2/3 c skim milk
2 T cinnamon
2 T Splenda
1/4 c Splenda
2 T butter, melted
1 tsp cinnamon

Recipe Directions for Pumpkin Pie Squares

  1. Set aside 1 C of the cake mix for the topping.

  2. Mix together the remaining cake mix, 1/2 C of melted butter, and 1 slightly beaten egg and press this mixture into the bottom of a 9"x13" baking pan.

  3. For the filling, mix together the canned pumpkin, 2 eggs, 2/3 C milk, 2 T cinnamon, and 2 T Splenda and pour the mixture over the crust in the pan.

  4. For the topping, mix together the 1 C of cake mix that you set aside, 1/4C of Splenda, 2 T of melted butter, and 1 tsp of cinnamon, and sprinkle this over the filling.

  5. Bake at 350°F for 45-50 minutes.

  6. To serve, cut into thirds down the length and fifths across the width and carefully lift the squares out with a spatula. They'll want to stick and crumble, so go slowly.
