A squash-based, low-calorie treat that tastes just like pumpkin pie.

Recipe Ingredients for Pumpkin Pie-sicles

2 1/2 lbs butternut squash
1/2 c maple syrup
2/3 c light cream
3/4 tsp pumpkin pie spice

Recipe Directions for Pumpkin Pie-sicles

  1. Cook the butternut squash any way you'd prefer. I roast it in the oven. Let the squash cool down for a few hours before scooping its innards into a medium bowl.

  2. Add syrup, cream, and spice - then beat until creamy. You can also just mash it with a fork or potato masher until it's uniform consistency.

  3. Spoon the mixture into ice pop molds and add sticks. Freeze for at least six hours before serving. You can also spoon into ice trays and add toothpicks for little bites of the stuff.
