My favorite Pumpkin Pie -- made with tofu! :)

Recipe Ingredients for Pumpkin Pie

15 oz Pumpkin
14 oz Silken Tofu
120 grams Soymilk Light Vanilla
32 grams stevia baking blend
1/2 tbsp Cinnamon, Ground
3/4 tsp Ginger, Ground
1/4 tsp Cloves, Ground
0.13 tsp Nutmeg, Ground
1.33 cup Whole Wheat Flour
0.33 cup Vegetable Oil, Canola
1/2 tsp Salt, Table
0.13 cup (8 fl oz) Water

Recipe Directions for Pumpkin Pie

  1. Combine pumpkin, tofu, soy milk, stevia, and spices in a large bowl (or blender).

  2. Mash together the flours, oil, salt, and water until it forms a dough. Form the dough to the pie-pan.

  3. Pour the pumpkin filling into the pan with the dough.

  4. Bake at 425 degrees F for 15 minutes, then at 350 degrees F for 45 minutes. Allow to cool, and then cut and serve.
