A light pumpkin pie without excessive sweetness

Recipe Ingredients for Pumpkin pie

2 cups pumpkin
1/2 cup honey
3/4 cup Skim milk
1 tbsp Powdered Milk
1/2 tsp Cinnamon
4 Egg Whites
2 Egg Yolks
1 Pie Crust

Recipe Directions for Pumpkin pie

  1. Mix together pumpkin, honey, skim milk, powdered milk, 2 of the egg yolks, and cinammon.

  2. Stir the mixture well in a big bowl.

  3. Take 4 egg whites and place in a mixer.

  4. Whip the egg whites into a meringue. This takes a high speed setting, such as 10 on a KitchenAid mixer.

  5. Fold in the meringue into the pumpkin mixture.

  6. Pour the mixture into the pie shell.

  7. Bake at 350 F for 60 minutes.
